Chive Muffins


- 2 cups all-purpose flour

- 1 tbsp. baking powder

- 1 tsp. sugar

- 1/2 tsp. salt

- 3 oz. shredded Londoner Cheddar Cheese (about 3/4 cup), divided

- 2 tbsp. chopped fresh chives

- 1 cup milk

- 6 tbsp. vegetable oil

- 1 large egg

Preheat oven to 375°F. Line 9 holes of a muffin pan with paper muffin cups or spray with cooking spray. Sift flour, baking powder, sugar and salt into a large mixing bowl. Stir in 1/2 cup of the cheese and the chives, making sure no clumps of cheese remain. In a small bowl, whisk together milk, oil and egg. With a wooden spoon, stir into flour mixture just until combined. The mixture will be quite lumpy, but there should be no traces of dry flour. Spoon into the prepared muffin pan and sprinkle the remaining cheese on top. Bake 20-25 minutes or until risen and golden. Serve warm.
