Farmhouse Cheddar, Tomato and Bacon Rarebit


- 1 tbsp. butter
- 1 tsp. whole grain mustard
- Pinch of cayenne pepper or paprika
- Few drops of Worcestershire sauce or chili sauce
- 3 oz. Londoner West Country Farmhouse Cheddar Cheese, shredded (about 3/4 cup)
- 2 thick slices farmhouse-style bread
- 4 rashers bacon
- 4 small tomatoes, halved

In a bowl, beat butter with a wooden spoon until soft. Add mustard, cayenne pepper or paprika, and Worcestershire sauce or chili sauce, beating until combined. Mix in cheese.

Preheat the broiler. Place bacon on the broiler rack and broil until crispy. Arrange bread slices on a baking sheet and broil about 3 inches from heat until toasted on one side. Spread untoasted sides with cheese mixture. Place tomatoes on baking sheet with bread and broil until tomatoes are hot and cheese mixture is golden brown. Serve the rarebit piping hot, topped with the bacon and tomatoes. 

Cook's Tip: Instead of Worcestershire sauce, try using mushroom ketchup instead. It has a similar consistency and gives a tasty kick to the cheese mixture. You don’t have to use farmhouse bread— any crusty loaf will work well.
