English Pub Burger


- 18 oz. extra-lean ground beef
- 4 scallions, finely chopped, white and light green parts only
- 3 tbsp. chopped fresh parsley or chives
- 2 tsp. mixed dried herbs
- 1 tsp. salt
- 1/4 tsp. medium-hot chili powder
- 1 tbsp. butter
- 1 red onion, thinly sliced
- 1 tsp. sugar
- 1 tbsp. balsamic vinegar
- 1 tsp. whole grain mustard
- 4 burger buns, sliced in half
- 1 cup mixed lettuce leaves
- 4 oz. Londoner Red Leicester or Londoner West Country Farmhouse Cheese, sliced

Mix together beef, scallions, parsley or chives, dried herbs, salt and chili powder. Shape into 4 burgers. Cover and chill until ready to cook.

To make the onion relish, in a frying pan, melt butter over medium heat. Add onion and fry for about 5 minutes or until softened. Add sugar and cook over low heatĀ for about 5 minutes or until very soft and caramelized. Add vinegar and mustard, cook for a few moments, then leave to cool while cooking the burgers.

Preheat a char-grill pan, broiler or barbecue. Cook burgers for 4-5 minutes on each side. If you like them well done, add 1-2 minutes to the cooking time.

Lightly toast burger buns on cut sides. Top with lettuce leaves, then place a burger on the bottom half of each bun. Top with cheese and onion relish and close with top half of bun.

Cook's Tip: Use white or yellow onion instead of red onion, if you prefer.
